This quick sweet cherry tomato and chickpea salad is super quick and easy. The juicy sweet cherry tomatoes make a refreshing change from the usual range of green leaf salads and it will soon become your go-to dish salad in the hot summer months.
It is really healthy and it comes almost entirely from staple ingredients that most of us have to hand. And as you don’t need to cook anything, it can be prepared quickly for unexpected visitors.
It is perfect for a BBQ side salad, and it looks far more impressive than the effort or time that goes into it.
Once you make this a few times, you can change the ingredients to suit your taste. I like to add equal amounts of chickpeas and cherry tomatoes, but add more of one or the other if preferred. Add different herbs and spices, use red or white wine vinegar if that’s what you have. The main thing is to make sure the cherry tomatoes are as fresh and sweet as possible.
Quick Sweet Cherry Tomato and Chickpea Salad
Ingredients
- 400 grams chickpeas (tinned) (drained and rinsed)
- 400 grams sweet cherry tomatoes (cut in half through the middle)
- 2 tbsp good quality extra virgin olive oil
- 0.5 tsp garlic salt or sea salt
- 1 tsp ground cumin
- 1 tsp ground coriander
- 4 tbsp chopped fresh coriander leaves ((reserve some leaves for garnishing))
- 2 tbsp cider vinegar
- 1/2 small red onion finely chopped
- salt and pepper (to taste)
Instructions
- Add the chickpeas and cherry tomatoes to a non-metallic bowl and mix well.
- Add in the remaining ingredients and stir well, making sure the chickpeas and cherry tomatoes are fully coated .
- Season generously with salt and pepper and garnish with coriander leaves.
