Tomato and basil are synonymous with Italian cooking. So everyone should have a quick and easy tomato and basil pasta sauce up their sleeves.

This version is so delicious, you’ll never want to buy pasta sauce in a jar again. The key is to use the freshest ingredients and the best quality tin of Italian tomatoes you can find.

The extra virgin oil might seem a lot but it gives the sauce its rich texture, and stops the onions from sticking whilst they do their magic.

I usually serve this with spaghetti but it goes with any pasta!

Tomato & Basil Pasta Sauce

Servings 4 People
A delicious Italian style pasta sauce made of tomatoes and basil.

Ingredients

  • 125 ml Extra Virgin Olive Oil
  • 3 large onions (very finely chopped)
  • 3 cloves garlic (crushed)
  • 1 tbsp sea salt
  • Freshly ground black pepper
  • 400 grams chopped tomatoes
  • 1 tbsp sugar
  • 4 tbsp Fresh Basil Leaves (roughly chopped)

Instructions 

  • Heat the extra virgin olive oil in a pan and sauté the onions, garlic, salt and pepper until the onion has softened – about 8-10 minutes.
  • Reduce the heat to a low setting and continue to cook for about another 10 minutes.
  • Add the tinned chopped tomatoes, sugar and the chopped basil.
  • Simmer simmer gently for another 15 minutes or until you have reached the desired consistency.
  • Garnish with torn basil leaves to serve.
