Vincisgrassi
Vincisgrassi is Marche’s answer to lasagne – and in some respects it goes further. Wide sheets of egg pasta layered with a rich meat ragù, chicken livers and a béchamel. It is more complex than a standard lasagne and considerably more interesting. This is the dish that defines Marche’s pasta tradition.
