Quick Sweet Cherry Tomato and Chickpea Salad
A tasty, quick to prepare and cheap summer salad.
Ingredients
400
grams
chickpeas (tinned)
drained and rinsed
400
grams
sweet cherry tomatoes
cut in half through the middle

tbsp
good quality extra virgin olive oil
0.5
tsp
garlic salt or sea salt
1
tsp
ground cumin
1
tsp
ground coriander
4
tbsp
chopped fresh coriander leaves
(reserve some leaves for garnishing)

tbsp
cider vinegar
1/2
small red onion finely chopped
salt and pepper
to taste
Instructions
Add the chickpeas and cherry tomatoes to a non-metallic bowl and mix well.
Add in the remaining ingredients and stir well, making sure the chickpeas and cherry tomatoes are fully coated .
Season generously with salt and pepper and garnish with coriander leaves.
