A lemon pasta recipe from Sicily made by dressing long pasta in a delicious lemon pasta sauce and parmesan cheese.

Ingredients
400gramsspaghetti
4lemonszest removed, and juiced
sea salt
extra virgin olive oil
1tbspparsleyfinely chopped
1tbspmintfinely chopped

Instructions
Put a pan of water on the hob for the pasta and bring to the boil. Cook the pasta until al dente.
Meanwhile, squeeze three lemons into a bowl and add a pinch of salt to the juice; grate the peel of the remaining lemon and cut it into slices.
Transfer everything to a bowl, add the same amount of extra virgin olive oil, cloves, mint, parsley and beat vigorously.
Drain the pasta and smother it with the lemon sauce, then serve.
Notes
The amounts of lemon and cheese are really down to personal preference. Use these amounts to start with. But feel free to adjust the amounts based on taste.
