I ate and cooked Italian food long before I first visited Italy. Since then, I’ve been to Italy many times, and every visit has delivered unforgettable meals. Yet two questions have lingered with me:
- If Italian food is so simple, why is it so difficult to make authentically when you get home?
- Why does the extraordinary diversity of Italian regional cooking remain largely unknown outside of Italy?
I’ve learned answer, at least to the first question, lies in the deceptive nature of simplicity itself. When a dish relies on just a handful of quality ingredients, there’s nowhere to hide. And beneath that apparent simplicity lies generations of understanding—the kind of knowledge that transforms good ingredients into something transcendent.
