Sicilian Orange and Fennel Salad

Sicilian Orange and Fennel Salad, (Insalata di Arance e Finocchio), is a refreshing and vibrant dish that beautifully captures the spirit of Sicilian cuisine.

Ingredients

  • 3 oranges Peeled and pith removed
  • 1 bulb fennel cut into very thin slices with a mandoline
  • extra virgin olive olive oil
  • salt
  • black pepper freshly ground
  • 2 anchovy fillets roughly chopped
  • fennel fronds for garnish

Instructions

  • Combine the orange segments (or slices) with the fennel slices and mix well/
  • Season with salt and pepper and add a good drizzle of of extra virgin olive oil and stir gently to combine.
  • Add the anchovy fillets, mix well then serve.
