Sicilian Orange and Fennel Salad, (Insalata di Arance e Finocchio), is a refreshing and vibrant dish that beautifully captures the spirit of Sicilian cuisine.
Ingredients
3orangesPeeled and pith removed
1bulbfennelcut into very thin slices with a mandoline
extra virgin olive olive oil
salt
black pepperfreshly ground
2anchovy filletsroughly chopped
fennel frondsfor garnish
Instructions
Combine the orange segments (or slices) with the fennel slices and mix well/
Season with salt and pepper and add a good drizzle of of extra virgin olive oil and stir gently to combine.
